Spiced Glazed Pecan, Berries & Goat Cheese Salad

This salad is a showstopper, and you will wow your guests when you serve it at your next family gathering. The lettuce, in and of itself, is fancy – a cool, crisp mix of petite tango, oak and gem lettuces. Layer on the creamy goat cheese with a hint of honey, tangy poached berries and pecans coated in a dark amber glaze with just a hint of cinnamon and allspice. Drizzle on a little of my Copycat Chick-fil-A® Zesty Apple Cider Vinaigrette, and it will be a night to remember.

Wow your guests with this Spiced Glazed Pecan, Berries & Goat Cheese Salad.
Makes: 6 2-cup servings
Calories: 235 per serving, no dressing; 435 per serving, with 2 tablespoons dressing

Ingredients:
12 cups petite lettuce (I use Artisan brand, found at ALDI)
1 (4 oz) package goat cheese, honey flavor (I use Happy Farms brand, found at ALDI)
1/2 cup Poached Dried Berries in Simple Syrup
3/4 cup Spiced Glazed Pecans
1 cup Copycat Chick-fil-A Zesty Apple Cider Vinaigrette
Directions:
Wash and dry lettuce (I use a salad spinner), and break into bite-sized pieces into a large salad bowl. Crumble half (2 oz) of the goat cheese over the salad. Sprinkle poached berries and spiced glazed pecans over the salad. Feel free to use more or less goat cheese, poached berries or spiced glazed pecans to taste. Serve with Copycat Chick-fil-A® Zesty Apple Cider Vinaigrette. Enjoy!
